  • 1 lb ground beef or turkey
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 packet chili seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup corn (optional)
  • 1 cup cornbread mix (prepared according to package instructions)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
Instructions:
  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Meat: In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
  3. Add Veggies and Seasoning: Add diced onion, bell pepper, and corn to the skillet. Cook until softened. Stir in the chili seasoning, beans, and diced tomatoes. Simmer for 5-7 minutes, allowing the flavors to blend. Season with salt and pepper to taste.
  4. Transfer to Baking Dish: Pour the chili mixture into a greased baking dish.
  5. Top with Cornbread: Pour the prepared cornbread mix evenly over the chili.
