- 1 pound ground beef (or ground turkey)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped (any color)
- 1 can (14 ounces) diced tomatoes
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (6 ounces) tomato paste
- 2 cups beef broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon oregano
- Salt and pepper, to taste
- Optional toppings: cheese, sour cream, jalapeños, cilantro, avocado
- Cook the ground beef in a large pot over medium heat until browned. If there's excess fat, drain it.
- Add the chopped onion, minced garlic, and chopped bell pepper to the pot. Cook until softened, about 5 minutes.
- Stir in the diced tomatoes, kidney beans, black beans, tomato paste, beef broth, chili powder, cumin, paprika, and oregano. Season with salt and pepper.
- Let the chili simmer uncovered on low heat for at least 30 minutes, stirring occasionally.
- Taste and adjust seasoning if needed.
