Ingredients:
- 1 bunch of Chinese broccoli (Gai Lan)
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil or peanut oil
- 1 tablespoon oyster sauce
- 1 teaspoon soy sauce
- 1/2 teaspoon sugar
- Salt and pepper to taste
- Optional: sesame oil for drizzling (about 1/2 teaspoon)
Instructions:
- Prepare the Chinese broccoli:
- Wash the Chinese broccoli thoroughly under cold water. Trim off any tough ends and cut into bite-sized pieces, including the stems.
- Blanch the Chinese broccoli:
- Bring a pot of water to boil. Add a pinch of salt. Blanch the Chinese broccoli in boiling water for about 1-2 minutes, or until bright green and slightly tender. Drain and set aside.
- Heat the oil:
- In a large pan or wok, heat the vegetable oil over medium-high heat.
- Stir-fry the garlic:
- Add the minced garlic to the hot oil and stir-fry for about 30 seconds, or until fragrant. Be careful not to burn the garlic.
- Add the Chinese broccoli:
- Add the blanched Chinese broccoli to the pan. Stir-fry for 2-3 minutes, tossing frequently, until the broccoli is tender-crisp.
- Season the broccoli:
- Add the oyster sauce, soy sauce, and sugar to the broccoli. Toss well to coat evenly. Cook for another minute or two until everything is heated through.
- Adjust seasoning:
- Taste and adjust the seasoning with salt and pepper if needed. Be mindful that oyster sauce is already salty, so adjust accordingly.
- Finish and serve:
- Drizzle with a little sesame oil for extra flavor (optional), then transfer the Chinese broccoli to a serving dish.
- Serve hot:
- Serve the Chinese broccoli stir-fry hot as a delicious side dish with steamed rice or as part of a larger Chinese meal.
Tips:
- Variations: You can add sliced fresh chili peppers or a pinch of chili flakes for a spicy kick.
- Protein addition: To make it a complete meal, you can add cooked chicken, shrimp, or tofu.
- Storage: Chinese broccoli stir-fry is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2 days.
