Ingredients:

  • 1 bunch of Chinese broccoli (Gai Lan)
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil or peanut oil
  • 1 tablespoon oyster sauce
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • Optional: sesame oil for drizzling (about 1/2 teaspoon)

Instructions:

  1. Prepare the Chinese broccoli:
    • Wash the Chinese broccoli thoroughly under cold water. Trim off any tough ends and cut into bite-sized pieces, including the stems.
  2. Blanch the Chinese broccoli:
    • Bring a pot of water to boil. Add a pinch of salt. Blanch the Chinese broccoli in boiling water for about 1-2 minutes, or until bright green and slightly tender. Drain and set aside.
  3. Heat the oil:
    • In a large pan or wok, heat the vegetable oil over medium-high heat.
  4. Stir-fry the garlic:
    • Add the minced garlic to the hot oil and stir-fry for about 30 seconds, or until fragrant. Be careful not to burn the garlic.
  5. Add the Chinese broccoli:
    • Add the blanched Chinese broccoli to the pan. Stir-fry for 2-3 minutes, tossing frequently, until the broccoli is tender-crisp.
  6. Season the broccoli:
    • Add the oyster sauce, soy sauce, and sugar to the broccoli. Toss well to coat evenly. Cook for another minute or two until everything is heated through.
  7. Adjust seasoning:
    • Taste and adjust the seasoning with salt and pepper if needed. Be mindful that oyster sauce is already salty, so adjust accordingly.
  8. Finish and serve:
    • Drizzle with a little sesame oil for extra flavor (optional), then transfer the Chinese broccoli to a serving dish.
  9. Serve hot:
    • Serve the Chinese broccoli stir-fry hot as a delicious side dish with steamed rice or as part of a larger Chinese meal.

Tips:

  • Variations: You can add sliced fresh chili peppers or a pinch of chili flakes for a spicy kick.
  • Protein addition: To make it a complete meal, you can add cooked chicken, shrimp, or tofu.
  • Storage: Chinese broccoli stir-fry is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2 days.
