I've recently been deep diving into Chinese dishes, and I came across Chinese scallion pancakes! And guys, when I tried making it, it was out of this world!!! So I'm sharing here now one of my current most favorite Chinese dish! I hope you guys enjoy <3

- 2 cups all-purpose flour
- 1 cup boiling water
- 2 tablespoons sesame oil
- 1 cup finely chopped scallions (green onions)
- Salt, to taste
- Vegetable oil for frying
Instructions:
- Place the flour in a large mixing bowl. Gradually add the boiling water while stirring with a fork or chopsticks until a dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.
- Divide the dough into 4 equal portions. Roll out one portion into a thin circle, about 1/8 inch thick.
- Brush the surface of the dough with sesame oil, then sprinkle with chopped scallions and a pinch of salt.
- Roll up the dough tightly into a long cylinder, then coil the cylinder into a spiral shape. Flatten the spiral with your hand, then roll it out again into a pancake, about 1/4 inch thick.
- Heat a tablespoon of vegetable oil in a non-stick skillet over medium heat. Cook the pancake for 2-3 minutes on each side until golden brown and crispy. Repeat with the remaining dough portions.
- Cut the pancakes into wedges and serve hot with soy sauce or your favorite dipping sauce.
