Chinese Scallion Pancakes

I've recently been deep diving into Chinese dishes, and I came across Chinese scallion pancakes! And guys, when I tried making it, it was out of this world!!! So I'm sharing here now one of my current most favorite Chinese dish! I hope you guys enjoy <3

Ingredients:
  • 2 cups all-purpose flour
  • 1 cup boiling water
  • 2 tablespoons sesame oil
  • 1 cup finely chopped scallions (green onions)
  • Salt, to taste
  • Vegetable oil for frying


Instructions:
  1. Place the flour in a large mixing bowl. Gradually add the boiling water while stirring with a fork or chopsticks until a dough forms.
  2. Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.
  3. Divide the dough into 4 equal portions. Roll out one portion into a thin circle, about 1/8 inch thick.
  4. Brush the surface of the dough with sesame oil, then sprinkle with chopped scallions and a pinch of salt.
  5. Roll up the dough tightly into a long cylinder, then coil the cylinder into a spiral shape. Flatten the spiral with your hand, then roll it out again into a pancake, about 1/4 inch thick.
  6. Heat a tablespoon of vegetable oil in a non-stick skillet over medium heat. Cook the pancake for 2-3 minutes on each side until golden brown and crispy. Repeat with the remaining dough portions.
  7. Cut the pancakes into wedges and serve hot with soy sauce or your favorite dipping sauce.
