  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 avocado, sliced
  • 1 cup salsa (store-bought or homemade)
  • 1 cup shredded lettuce or cabbage
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • Optional toppings: sour cream, chopped cilantro, lime wedges
Instructions:
  1. Prepare the Rice: Cook the rice according to package instructions. Fluff with a fork when done.
  2. Season the Beans: Heat olive oil in a skillet over medium heat. Add black beans, cumin, chili powder, and salt. Cook for 5-7 minutes, stirring occasionally, until heated through and well combined.
  3. Cook the Corn: In the same skillet or a separate one, add the corn kernels and cook until warmed through, about 3-4 minutes.
  4. Assemble the Bowl: Divide the cooked rice among serving bowls. Top with seasoned black beans, corn, avocado slices, salsa, shredded lettuce or cabbage, and shredded cheese.
  5. Add Toppings: Garnish with optional toppings like sour cream, chopped cilantro, and lime wedges.
