Savory Stuffed Bell Peppers


Ingredients:
- 4 large bell peppers (any color)
- 1 cup cooked quinoa or rice
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- Fresh cilantro or parsley, for garnish
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Peppers: Cut the tops off the bell peppers and remove seeds and membranes. Place them upright in a baking dish.
- Mix Filling: In a bowl, combine quinoa or rice, black beans, corn, diced tomatoes, half of the cheese, and all the spices. Stir until well mixed.
- Stuff Peppers: Spoon the filling mixture into each bell pepper, packing it tightly. Sprinkle remaining cheese on top.
- Bake: Cover the baking dish with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes, until peppers are tender and cheese is melted.
- Garnish: Sprinkle with fresh cilantro or parsley before serving.
