SO YUMMY COMFORT FOOD!
Ingredients:
- 1 cup long-grain white rice
- 2 cups water
- 1 tablespoon vegetable oil
- 1/2 teaspoon salt
- 1 lime
- 1/4 cup fresh cilantro, chopped
Instructions:
- Rinse the Rice:
- Rinse 1 cup of long-grain white rice under cold water until the water runs clear. This helps remove excess starch and keeps the rice from becoming too sticky.
- Cook the Rice:
- In a medium saucepan, heat 1 tablespoon of vegetable oil over medium heat.
- Add the rinsed rice to the pan and cook, stirring frequently, for about 1-2 minutes. This helps to lightly toast the rice and adds flavor.
- Add 2 cups of water and 1/2 teaspoon of salt to the pan. Stir to combine.
- Simmer:
- Bring the water to a boil, then reduce the heat to low. Cover the saucepan with a lid and let the rice simmer for about 15-18 minutes, or until the water is absorbed and the rice is tender.
- Fluff and Season:
- Remove the saucepan from the heat and let it sit, covered, for 5 minutes. This allows the rice to finish steaming.
- After 5 minutes, fluff the rice with a fork to separate the grains.
- Add Lime and Cilantro:
- Zest and juice 1 lime. Stir the lime zest and juice into the rice.
- Fold in 1/4 cup of freshly chopped cilantro.
- Serve:
- Serve the rice warm as a side dish or as a base for burritos, tacos, or bowls.
