Ingredients:​

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon salt
  • 1 lime
  • 1/4 cup fresh cilantro, chopped

Instructions:​

  1. Rinse the Rice:
    • Rinse 1 cup of long-grain white rice under cold water until the water runs clear. This helps remove excess starch and keeps the rice from becoming too sticky.
  2. Cook the Rice:
    • In a medium saucepan, heat 1 tablespoon of vegetable oil over medium heat.
    • Add the rinsed rice to the pan and cook, stirring frequently, for about 1-2 minutes. This helps to lightly toast the rice and adds flavor.
    • Add 2 cups of water and 1/2 teaspoon of salt to the pan. Stir to combine.
  3. Simmer:
    • Bring the water to a boil, then reduce the heat to low. Cover the saucepan with a lid and let the rice simmer for about 15-18 minutes, or until the water is absorbed and the rice is tender.
  4. Fluff and Season:
    • Remove the saucepan from the heat and let it sit, covered, for 5 minutes. This allows the rice to finish steaming.
    • After 5 minutes, fluff the rice with a fork to separate the grains.
  5. Add Lime and Cilantro:
    • Zest and juice 1 lime. Stir the lime zest and juice into the rice.
    • Fold in 1/4 cup of freshly chopped cilantro.
  6. Serve:
    • Serve the rice warm as a side dish or as a base for burritos, tacos, or bowls.
