Ingredients:

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 cup ice water
For the Chocolate Filling:

  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 4 large egg yolks, beaten
  • 1 1/2 cups semi-sweet chocolate chips
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
For the Meringue Topping:

  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar
Instructions:

  1. Prepare the Crust:
    • In a large bowl, mix together the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
    • Gradually add ice water, 1 tablespoon at a time, until the dough begins to come together.
    • Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
    • Preheat your oven to 375°F (190°C).
    • Roll out the dough on a lightly floured surface and fit it into a 9-inch pie dish. Trim and crimp the edges.
    • Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment and bake for an additional 10 minutes or until golden. Let cool completely.
  2. Make the Chocolate Filling:
    • In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually whisk in the milk until smooth.
    • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Boil for 1 minute, then remove from heat.
    • In a separate bowl, whisk the beaten egg yolks. Gradually whisk in about 1/2 cup of the hot milk mixture to temper the eggs, then return the egg mixture to the saucepan.
    • Return to medium heat and cook for an additional 2 minutes, stirring constantly.
    • Remove from heat and stir in the chocolate chips, butter, and vanilla extract until smooth and fully melted.
    • Pour the chocolate filling into the cooled crust and set aside.
  3. Prepare the Meringue:
    • In a large bowl, beat the egg whites and cream of tartar until soft peaks form.
    • Gradually add the sugar, 1 tablespoon at a time, beating until stiff, glossy peaks form.
  4. Assemble and Bake:
    • Preheat your oven to 350°F (175°C).
    • Spread the meringue over the chocolate filling, sealing the edges to the crust.
    • Bake for 10-12 minutes, or until the meringue is golden brown.
    • Let the pie cool to room temperature, then refrigerate for at least 2 hours before serving.
