- 1 1/2 cups chocolate cookie crumbs (about 20 cookies)
- 6 tablespoons melted butter
- 1 cup semi-sweet chocolate chips
- 1/3 cup granulated sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 1/2 cups whole milk
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- Prepare the crust:
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the chocolate cookie crumbs and melted butter until well combined.
- Press the mixture into a 9-inch pie dish, covering the bottom and up the sides.
- Bake the crust for 8-10 minutes, then remove from the oven and let it cool completely.
- Make the filling:
- In a saucepan, combine the chocolate chips, granulated sugar, cornstarch, and salt.
- Gradually whisk in the milk until smooth.
- Place the saucepan over medium heat, stirring constantly until the mixture thickens and comes to a boil, about 5-7 minutes.
- In a small bowl, lightly beat the egg yolks. Gradually whisk about 1 cup of the hot chocolate mixture into the egg yolks.
- Pour the egg mixture back into the saucepan and cook, stirring constantly, for an additional 2 minutes.
- Remove from heat and stir in the vanilla extract.
- Pour the filling into the cooled pie crust and smooth the top.
- Chill the pie:
- Cover the pie with plastic wrap, making sure the wrap touches the surface of the filling to prevent a skin from forming.
- Refrigerate the pie for at least 4 hours or until set.
- Make the whipped cream topping:
- In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Spread the whipped cream over the chilled pie.
- Serve:
