- 1/2 cup cold unsalted butter, cut into small cubes
- 1/2 cup chopped fresh strawberries
- 1/2 cup chocolate chunks or chips
- 2/3 cup heavy cream, plus extra for brushing
- 1 large egg
- 1 teaspoon vanilla extract
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Mix well to combine.
- Add the cold cubed butter to the flour mixture and use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.
- Gently fold in the chopped strawberries and chocolate chunks until evenly distributed throughout the mixture.
- In a separate bowl, whisk together the heavy cream, egg, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
- Pat the dough into a circle about 1 inch thick, then use a sharp knife to cut it into 8 wedges.
- Transfer the scones to the prepared baking sheet, leaving some space between each one.
- Brush the tops of the scones with a little extra heavy cream to help them brown in the oven.
- Bake the Chocolate Strawberry Scones in the preheated oven for 18-20 minutes, or until golden brown and cooked through.
- Remove the scones from the oven and let them cool slightly on the baking sheet before serving.
