Ingredients:
For the Clams:
- 2 pounds fresh clams (such as littlenecks or Manila), scrubbed and rinsed
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes (or 2 cups fresh tomatoes, chopped)
- 1 cup white wine (such as Sauvignon Blanc or Chardonnay)
- 1 cup chicken or vegetable broth
- 1 teaspoon red pepper flakes (adjust to taste)
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
For the Garlic Mayo:
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
- Salt and black pepper to taste
Instructions:
1. Prepare the Garlic Mayo:
- Mix Ingredients:
- In a small bowl, combine the mayonnaise, minced garlic, lemon juice, and chopped parsley. Season with salt and black pepper to taste. Mix well and refrigerate until ready to serve.
2. Prepare the Clams:
- Sauté Aromatics:
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the finely chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another 1 minute until fragrant.
- Add Tomatoes and Seasonings:
- Stir in the diced tomatoes (with their juice), white wine, chicken or vegetable broth, red pepper flakes, smoked paprika, dried oregano, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 5 minutes to allow the flavors to meld.
- Cook the Clams:
- Add the clams to the pot, cover with a lid, and cook for 5-7 minutes, or until the clams have opened. Discard any clams that do not open.
- Finish the Broth:
- Taste the broth and adjust the seasoning if necessary. If you prefer a thicker broth, you can simmer it for a few more minutes to reduce slightly.
3. Serve:
- Plate the Dish:
- Transfer the clams and spicy tomato broth to serving bowls. Garnish with fresh parsley.
- Serve with Garlic Mayo:
- Serve the garlic mayo on the side for dipping. You can also serve with crusty bread to soak up the flavorful broth.
