I recently made Zuppa di Pesce, and it turned out great. This Italian seafood soup is simple, fresh, and full of flavor. 🍲

Ingredients:​

  • 1 lb mixed seafood (shrimp, mussels, clams, squid)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) crushed tomatoes
  • 4 cups fish or vegetable broth
  • 1 cup white wine
  • 1 teaspoon red pepper flakes
  • Fresh parsley, chopped
  • Salt and pepper
  • Crusty bread (for serving)

Instructions:​

  1. Prep the Seafood: Rinse and clean the seafood. Set aside.
  2. Cook the Base: Heat olive oil in a large pot over medium heat. Sauté the onion until soft, then add the garlic.
  3. Make the Broth: Pour in the white wine and let it simmer for a few minutes. Add the crushed tomatoes, broth, and red pepper flakes. Bring to a boil, then lower the heat to a simmer.
  4. Cook the Seafood: Add the seafood to the pot. Cover and cook for about 10 minutes, or until the seafood is cooked and the mussels and clams open.
  5. Serve: Taste and season with salt and pepper. Serve hot, garnished with parsley, and with crusty bread on the side.
