- 1 cup dried green lentils, rinsed and drained
- 1 tablespoon coconut oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 2 carrots, diced
- 2 stalks celery, diced
- 1 red bell pepper, diced
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 4 cups vegetable broth
- 1 (14 oz) can coconut milk
- Juice of 1 lime
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Cooked rice or naan bread, for serving (optional)
- In a large pot, heat coconut oil over medium heat. Add diced onion and cook until translucent, about 5 minutes.
- Add minced garlic and grated ginger to the pot, and cook for an additional 1-2 minutes, until fragrant.
- Stir in diced carrots, celery, and red bell pepper, and cook for another 5 minutes, until vegetables begin to soften.
- Add curry powder, ground cumin, and ground turmeric to the pot, and stir to coat the vegetables in the spices.
- Pour in vegetable broth and add rinsed lentils to the pot. Bring the soup to a boil, then reduce heat and let it simmer, covered, for about 20-25 minutes, until lentils are tender.
- Stir in coconut milk and lime juice, and season with salt and pepper to taste.
