  • Lime wedges (for serving)
Instructions:

  1. Heat Oil: In a large skillet, heat the olive oil over medium heat.
  2. Sauté Aromatics: Add the onion, garlic, and ginger. Cook until the onion is translucent, about 3-4 minutes.
  3. Add Curry Powder: Stir in the curry powder and cook for 1 minute until fragrant.
  4. Cook Shrimp: Add the shrimp and cook until they turn pink, about 2-3 minutes per side.
  5. Add Coconut Milk: Pour in the coconut milk and stir well. Let it simmer for 5 minutes.
  6. Add Veggies: Add the cherry tomatoes and red bell pepper. Cook until tender, about 5 minutes.
  7. Finish: Stir in the baby spinach and soy sauce. Season with salt and pepper to taste.
  8. Serve: Garnish with fresh cilantro and serve with lime wedges on the side.
