Coronation Chicken Recipe:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 teaspoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup mango chutney
  • 1/4 cup apricot preserves or jam
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt or sour cream
  • 2 tablespoons lemon juice
  • 1/4 cup chopped dried apricots
  • 1/4 cup toasted slivered almonds
  • Fresh cilantro or parsley, for garnish
  • Cooked rice or bread, for serving
Instructions:

  1. Season the chicken breasts with salt and pepper.
  2. Heat vegetable oil in a skillet over medium-high heat.
  3. Cook chicken until browned and no longer pink, then set aside to cool.
  4. In the same skillet, cook onion and garlic until softened.
  5. Add curry powder, turmeric, ginger, cumin, and cayenne pepper.
  6. Stir in mango chutney and apricot preserves.
  7. In a bowl, mix mayonnaise, Greek yogurt, and lemon juice.
  8. Add chicken, onion mixture, dried apricots, and almonds to the bowl.
  9. Stir until well combined and refrigerate for at least 1 hour.
  10. Garnish with cilantro or parsley before serving.
