Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 teaspoons curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 cup mango chutney
- 1/4 cup apricot preserves or jam
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt or sour cream
- 2 tablespoons lemon juice
- 1/4 cup chopped dried apricots
- 1/4 cup toasted slivered almonds
- Fresh cilantro or parsley, for garnish
- Cooked rice or bread, for serving
- Season the chicken breasts with salt and pepper.
- Heat vegetable oil in a skillet over medium-high heat.
- Cook chicken until browned and no longer pink, then set aside to cool.
- In the same skillet, cook onion and garlic until softened.
- Add curry powder, turmeric, ginger, cumin, and cayenne pepper.
- Stir in mango chutney and apricot preserves.
- In a bowl, mix mayonnaise, Greek yogurt, and lemon juice.
- Add chicken, onion mixture, dried apricots, and almonds to the bowl.
