- 2 cups cooked chicken, diced or shredded (leftover roast chicken works well)
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt (or sour cream)
- 2 tablespoons mango chutney
- 1 tablespoon curry powder
- 1 tablespoon lemon juice
- 1/4 cup sliced almonds (optional)
- Salt and pepper to taste
- Chopped fresh cilantro or parsley for garnish (optional)
- In a large mixing bowl, combine the mayonnaise, Greek yogurt (or sour cream), mango chutney, curry powder, and lemon juice. Mix well until smooth and thoroughly combined.
- Add the diced or shredded chicken to the bowl and gently fold it into the sauce until the chicken is evenly coated.
- If using sliced almonds, lightly toast them in a dry skillet over medium heat until golden brown and fragrant. Allow them to cool slightly.
- Add the toasted almonds to the chicken mixture and gently fold them in.
- Taste the Coronation Chicken and season with salt and pepper as needed.
- Cover the bowl and refrigerate the Coronation Chicken for at least 30 minutes to allow the flavors to meld together.
