Here's a simple recipe for Crab Soup

Ingredients:

  • 1 pound crabmeat (fresh or canned)
  • 4 cups chicken or vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 2 carrots, diced
  • 1 can diced tomatoes
  • 1 teaspoon Old Bay seasoning (adjust to taste)
  • Salt and pepper to taste
  • 2 tablespoons butter or oil
  • Fresh parsley for garnish (optional)
Instructions:

  1. In a large pot, melt the butter or heat the oil over medium heat.
  2. Add the diced onion, garlic, celery, and carrots. Cook until the vegetables are softened, about 5-7 minutes.
  3. Stir in the diced tomatoes and Old Bay seasoning. Cook for another 2-3 minutes.
  4. Pour in the chicken or vegetable broth and bring the soup to a simmer.
  5. Once simmering, add the crabmeat to the pot. Stir gently to combine.
  6. Let the soup simmer for about 10-15 minutes to allow the flavors to meld together.
  7. Taste the soup and adjust seasoning with salt, pepper, or more Old Bay seasoning if needed.
  8. Serve hot, garnished with fresh parsley if desired.
