Ingredients:
- 1 pound crabmeat (fresh or canned)
- 4 cups chicken or vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 2 stalks celery, diced
- 2 carrots, diced
- 1 can diced tomatoes
- 1 teaspoon Old Bay seasoning (adjust to taste)
- Salt and pepper to taste
- 2 tablespoons butter or oil
- Fresh parsley for garnish (optional)
- In a large pot, melt the butter or heat the oil over medium heat.
- Add the diced onion, garlic, celery, and carrots. Cook until the vegetables are softened, about 5-7 minutes.
- Stir in the diced tomatoes and Old Bay seasoning. Cook for another 2-3 minutes.
- Pour in the chicken or vegetable broth and bring the soup to a simmer.
- Once simmering, add the crabmeat to the pot. Stir gently to combine.
- Let the soup simmer for about 10-15 minutes to allow the flavors to meld together.
- Taste the soup and adjust seasoning with salt, pepper, or more Old Bay seasoning if needed.
- Serve hot, garnished with fresh parsley if desired.
