Ingredients:
- 4-6 crayfish (cleaned and deveined)
- 2 tablespoons olive oil
- 1 onion (diced)
- 3 cloves garlic (minced)
- 1 can (14.5 oz) diced tomatoes (or 2 cups fresh tomatoes, chopped)
- 1/4 cup tomato paste
- 1/2 cup chicken or vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional, for heat)
- Salt and pepper to taste
- Fresh basil or parsley (chopped, for garnish)
Instructions:
- Prepare Crayfish: Clean and devein the crayfish if not already done.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add diced onion and cook until soft, about 3-4 minutes. Add minced garlic and cook for another 1-2 minutes until fragrant.
- Make Tomato Sauce: Stir in diced tomatoes, tomato paste, and broth. Add oregano, basil, red pepper flakes (if using), salt, and pepper. Simmer for about 5 minutes to let the flavors meld.
- Cook Crayfish: Add crayfish to the skillet and cover. Simmer for 8-10 minutes, or until the crayfish are opaque and cooked through.
- Finish and Serve: Adjust seasoning with salt and pepper as needed. Garnish with fresh basil or parsley before serving.
