For the crust:- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1 can (14 oz) sweetened condensed milk
- ½ cup fresh lemon juice (about 3-4 lemons)
- 1 tablespoon lemon zest
- 4 large egg yolks
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- Preheat and Prep: Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish lightly with butter or cooking spray.
- Make the Crust: In a medium bowl, mix the graham cracker crumbs and sugar. Pour in the melted butter and stir until the mixture resembles wet sand. Press the mixture firmly into the bottom and up the sides of the prepared pie dish. Bake for 10 minutes, then set aside to cool.
