- 500 grams chicken breast, diced
- 2 tablespoons cooking oil
- 3 cloves garlic, minced
- 1 onion, chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup chicken broth
- 1 cup evaporated milk
- 1 cup shredded cabbage
- 1 cup diced carrots
- 1 cup diced potatoes
- 1 cup green peas
- 6 hard-boiled eggs, peeled and halved
- Salt and pepper to taste
- Fish sauce or soy sauce, to taste (optional)
- Spring onions, chopped (for garnish)
- In a large pan, heat the cooking oil over medium heat. Add the minced garlic and chopped onion, sauté until fragrant and translucent.
- Add the diced chicken breast to the pan and cook until lightly browned.
- Once the chicken is cooked, add the diced carrots and potatoes. Cook for a few minutes until they start to soften.
- Pour in the chicken broth and bring to a simmer. Allow the carrots and potatoes to cook until tender.
- Add the diced bell peppers, shredded cabbage, and green peas to the pan. Stir well to combine.
- Pour in the evaporated milk and stir until everything is well incorporated. Let it simmer for a few more minutes.
- Season the mixture with salt, pepper, and fish sauce or soy sauce to taste, if desired.
- Gently add the halved hard-boiled eggs to the pan, making sure they are submerged in the creamy mixture.
- Let the mixture simmer for another 5 minutes to allow the flavors to meld together.
