Hey everyone! I wanted to share my go-to crepe batter recipe. It’s super simple and makes the crepes so light and delicious. Perfect for breakfast, brunch, or even a sweet treat!

- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk (any kind works, but whole milk makes it extra rich!)
- 2 tablespoons melted butter (plus a bit more for cooking)
- 1/4 teaspoon salt
- 1 tablespoon sugar (optional, for a touch of sweetness)
- In a mixing bowl, whisk together the flour, salt, and sugar (if using).
- In another bowl, beat the eggs and then add the milk and melted butter.
- Gradually pour the wet ingredients into the dry ingredients, whisking constantly to avoid lumps. The batter should be smooth and slightly runny.
- Let the batter rest for at least 30 minutes if you have the time; this helps the crepes turn out even better!
- Heat a non-stick skillet or crepe pan over medium heat and lightly grease with a bit of butter.
- Pour about 1/4 cup of batter into the pan, tilting the pan to spread the batter evenly. Cook for about 1-2 minutes until the edges start to lift, then flip and cook for another minute.
