  • 1 lb Asiago cheese, coarsely shredded, aged
  • Optional seasonings: sesame seeds, macadamia nuts (finely chopped)

Instructions​

  1. Prepare the Frico: Grate the Asiago cheese and sprinkle it in mounds in a nonstick skillet. Optionally, top each mound with a pinch of sesame seeds or macadamia nuts.
  2. Cook the Frico: Over moderately high heat, cook the cheese mounds until lacy and slightly set. Using a thin, flexible metal spatula, loosen and flip each frico and cook for 1 minute longer, or until crisp and golden.
  3. Drain the Frico: After cooking, transfer the frico to paper towels to drain any excess oil.
  4. Repeat the Process: Wipe out the skillet and repeat the process to make additional frico.
