Prepare to be tantalized by the crispy Asiago Frico. Enjoy it as a standalone dish or use it to garnish and elevate your meals. Made with a base of Asiago cheese, this delicacy is all about the right crunch and the perfect melt. For this recipe, aged Asiago is ideal for a more robust flavor and crispness when heated.
Ingredients
- 1 lb Asiago cheese, coarsely shredded, aged
- Optional seasonings: sesame seeds, macadamia nuts (finely chopped)
Instructions
- Prepare the Frico: Grate the Asiago cheese and sprinkle it in mounds in a nonstick skillet. Optionally, top each mound with a pinch of sesame seeds or macadamia nuts.
- Cook the Frico: Over moderately high heat, cook the cheese mounds until lacy and slightly set. Using a thin, flexible metal spatula, loosen and flip each frico and cook for 1 minute longer, or until crisp and golden.
- Drain the Frico: After cooking, transfer the frico to paper towels to drain any excess oil.
- Repeat the Process: Wipe out the skillet and repeat the process to make additional frico.
