  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup finely diced red bell pepper
  • Olive oil or cooking spray, for frying
For the herbed yogurt sauce:

  • 1 cup Greek yogurt
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
Instructions:

  1. In a large mixing bowl, whisk together the chickpea flour, baking powder, ground cumin, ground coriander, turmeric, salt, and black pepper.
  2. Gradually add the water and olive oil to the dry ingredients, whisking until you have a smooth batter.
  3. Stir in the chopped fresh cilantro, green onions, and finely diced red bell pepper until evenly distributed throughout the batter.
  4. Heat a non-stick skillet or frying pan over medium heat. Lightly grease the skillet with olive oil or cooking spray.
  5. Pour about 1/4 cup of the batter onto the skillet, spreading it out into a round pancake shape with the back of a spoon.
  6. Cook the pancake for 2-3 minutes on each side, or until golden brown and crispy. Repeat with the remaining batter, adding more olive oil or cooking spray to the skillet as needed.
  7. While the pancakes are cooking, prepare the herbed yogurt sauce. In a small bowl, combine the Greek yogurt, chopped fresh parsley, chopped fresh dill, chopped fresh mint, lemon juice, salt, and pepper. Stir until well combined.
