Crispy Quinoa Patties
Ingredients:
- 1 cup cooked quinoa (cooled)
- 1 cup grated carrot
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley (or cilantro)
- 1/4 cup all-purpose flour (or gluten-free flour if needed)
- 1/4 cup grated Parmesan cheese (optional, for extra flavor)
- 1 large egg (beaten)
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp olive oil (or any cooking oil of your choice)
Instructions:
- Prepare the Ingredients:
- Cook quinoa according to package instructions and let it cool.
- Grate the carrot and chop the onion and parsley.
- Mix the Patties:
- In a large bowl, combine the cooked quinoa, grated carrot, chopped onion, minced garlic, and parsley.
- Add the flour, Parmesan cheese (if using), beaten egg, cumin, smoked paprika, salt, and pepper. Mix until well combined.
- Form the Patties:
- Shape the mixture into small patties (about 1/4 cup each), pressing them firmly to hold together.
- Cook the Patties:
- Heat olive oil in a skillet over medium heat.
- Cook the patties in batches, about 3-4 minutes per side, until they are golden brown and crispy.
- Serve:
- Serve warm with your favorite dipping sauce or on a bed of greens for a delicious and healthy meal!
