- 1/2 lb (225g) ground pork or chicken

- 2 tablespoons soy sauce
- 1 tablespoon Chinese rice wine (or dry sherry)
- 2 tablespoons sesame paste (or smooth peanut butter)
- 1 tablespoon soybean paste (or hoisin sauce)
- 1 tablespoon chili oil (adjust to taste)
- 1 tablespoon black vinegar (or rice vinegar)
- 1 teaspoon sugar
- 1/2 cup chicken or vegetable broth
- Chopped green onions, for garnish
- Crushed roasted peanuts, for garnish (optional)
- Cook the noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the ground pork or chicken and cook until browned and cooked through, breaking it up into small pieces with a spoon. Remove from skillet and set aside.
- In the same skillet, add a bit more oil if needed and sauté the garlic and ginger until fragrant, about 30 seconds.
- Return the cooked meat to the skillet. Add soy sauce, rice wine, sesame paste, soybean paste, chili oil, black vinegar, and sugar. Stir well to combine.
- Pour in the chicken or vegetable broth and bring to a simmer. Cook for a few minutes until the sauce thickens slightly.
- Add the cooked noodles to the skillet and toss to coat evenly with the sauce. If the sauce is too thick, add a bit more broth or water.
- Serve the Dan Dan noodles hot, garnished with chopped green onions and crushed peanuts if desired.
