Ingredients:
  • 8 oz (225g) dried Chinese egg noodles or wheat noodles
  • 1/2 lb (225g) ground pork or chicken

  • 2 cloves garlic, minced
  • 2 teaspoons ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon Chinese rice wine (or dry sherry)
  • 2 tablespoons sesame paste (or smooth peanut butter)
  • 1 tablespoon soybean paste (or hoisin sauce)
  • 1 tablespoon chili oil (adjust to taste)
  • 1 tablespoon black vinegar (or rice vinegar)
  • 1 teaspoon sugar
  • 1/2 cup chicken or vegetable broth
  • Chopped green onions, for garnish
  • Crushed roasted peanuts, for garnish (optional)
Instructions:
  1. Cook the noodles according to package instructions until al dente. Drain and set aside.
  2. In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the ground pork or chicken and cook until browned and cooked through, breaking it up into small pieces with a spoon. Remove from skillet and set aside.
  3. In the same skillet, add a bit more oil if needed and sauté the garlic and ginger until fragrant, about 30 seconds.
  4. Return the cooked meat to the skillet. Add soy sauce, rice wine, sesame paste, soybean paste, chili oil, black vinegar, and sugar. Stir well to combine.
  5. Pour in the chicken or vegetable broth and bring to a simmer. Cook for a few minutes until the sauce thickens slightly.
  6. Add the cooked noodles to the skillet and toss to coat evenly with the sauce. If the sauce is too thick, add a bit more broth or water.
  7. Serve the Dan Dan noodles hot, garnished with chopped green onions and crushed peanuts if desired.
