Hey friends! So, I just tried making Maduros yesterday morning, and let me tell you, they were absolutely delicious! If you love sweet, caramelized plantains, you’re in for a treat. They’re super easy to make, and the flavors are just amazing! Perfect as a side dish or snack. Let’s dive into this yummy recipe!

- 3 large, very ripe plantains (the ones that are mostly black, about 1¾ pounds)
- Vegetable or canola oil, for frying
- Kosher salt
- Start by trimming both ends of the plantains. Then, using a paring knife, make 3 long cuts through the skin, trying not to cut into the flesh. Space the cuts evenly apart across each plantain. Gently peel away the skin, using the cuts as your guide.
- Slice the plantains on a slight diagonal into ¾-inch thick pieces. You should end up with about 24 pieces total.
- In a large skillet, heat about ¼ inch of oil over medium-high heat. When the oil is hot and shimmering, dip the edge of one plantain slice into the oil. If it bubbles vigorously, you’re good to go! If not, let the oil heat for another minute.
- Carefully add half of the plantain slices in an even layer. Cook them until they’re browned in spots on the first side, which takes about 2 minutes. Use a slotted spatula to flip them over.
- Cook the other side until it’s also browned, around 2 more minutes. After that, flip the plantains again, reduce the heat to medium, and keep cooking until they’re super tender and deeply browned, about 4 to 8 minutes. Flip them every 2 minutes to cook evenly. Just remember, some pieces might cook faster, so feel free to remove those as they finish.
- Once cooked, transfer the plantains to a wire rack set over a baking sheet. Sprinkle generously with salt on both sides. Repeat the cooking process with the remaining plantains, adding more oil if needed to maintain that ¼ inch.
