Take a culinary trip to Northern Greece with Fasolada Makedoniki, a Macedonian-style bean soup that's robust, flavorful, and brimming with hearty ingredients! This unique twist on the classic Greek soup includes sweet red peppers and spices that bring an extra layer of warmth and depth to every bowl. Perfect for those cozy days!
*Ingredients:*
- 1 ½ cups white beans (soaked overnight)
- 1 onion (chopped)
- 2 red bell peppers (chopped)
- 2 carrots (sliced)
- 1 tsp sweet paprika
- 1 tsp dried thyme
- 4–5 cups water or vegetable broth
- Salt and pepper to taste
- Olive oil and fresh parsley for garnish
*Instructions:*
1. In a large pot, sauté the onion, carrots, and red bell peppers until softened.
2. Add the beans, sweet paprika, thyme, and enough water or broth to cover everything.
3. Simmer for 1–1.5 hours, until beans are tender, adding more water if needed.
4. Season with salt and pepper, drizzle with olive oil, and garnish with fresh parsley before serving.
