Ingredients:
- 2 cups old-fashioned oats
- 1/3 cup brown sugar
- 1 teaspoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 2 cups milk
- 1 large egg
- 2 tablespoons butter, melted and cooled slightly
- 1 teaspoon vanilla extract
- 1 large apple, peeled and diced
- 1/2 cup chopped pecans or walnuts
- 1/2 cup diced dried apple
- Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking dish.
- In a large bowl, combine the oats, brown sugar, baking powder, cinnamon, and salt.
- In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until well combined.
- Fold in the diced apple, chopped nuts, and dried apple.
- Pour the mixture into the prepared baking dish and spread it out evenly.
- Bake for 40-45 minutes, or until the oatmeal is set and golden brown on top.
- Remove from the oven and let it cool for a few minutes before serving.
