Drumstick Pie Recipe:

Ingredients:For the Chocolate Crust:

  • 1 1/2 cups chocolate cookie crumbs (from about 20 chocolate sandwich cookies)
  • 6 tablespoons unsalted butter, melted
For the Vanilla Custard Filling:

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • Pinch of salt
For the Chocolate Ganache Topping:

  • 4 ounces semisweet chocolate, chopped
  • 1/2 cup heavy cream
  • 1/4 cup chopped peanuts or almonds, for garnish
Instructions:

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9-inch pie dish.
  2. In a medium bowl, mix together the chocolate cookie crumbs and melted butter until well combined.
  3. Press the mixture evenly into the bottom and up the sides of the prepared pie dish to form the crust.
  4. Bake the crust in the preheated oven for 8-10 minutes, or until set. Remove from the oven and let it cool completely.
  5. While the crust is cooling, prepare the vanilla custard filling. In a saucepan, heat the whole milk over medium heat until it begins to simmer.
  6. In a separate bowl, whisk together the granulated sugar, cornstarch, egg yolks, vanilla extract, and salt until smooth and well combined.
  7. Gradually pour the hot milk into the egg mixture, whisking constantly to prevent curdling.
  8. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened and bubbling, about 5-7 minutes.
  9. Remove the custard from the heat and pour it into the cooled chocolate crust. Smooth the top with a spatula.
  10. Cover the pie with plastic wrap, making sure the plastic wrap touches the surface of the custard to prevent a skin from forming. Refrigerate for at least 2 hours, or until the custard is chilled and set.
  11. Once the custard is set, prepare the chocolate ganache topping. Place the chopped semisweet chocolate in a heatproof bowl.
  12. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for 1-2 minutes.
  13. Stir the chocolate and cream together until smooth and glossy.
  14. Pour the chocolate ganache over the chilled custard filling, spreading it evenly with a spatula.
  15. Sprinkle the chopped peanuts or almonds over the top of the chocolate ganache.
  16. Refrigerate the Drumstick Pie for an additional 30 minutes, or until the ganache is set.
  17. Slice and serve chilled, and enjoy the nostalgic flavors of this delightful Drumstick Pie!
