- 1 1/2 cups chocolate cookie crumbs (from about 20 chocolate sandwich cookies)
- 6 tablespoons unsalted butter, melted
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 4 large egg yolks
- 1 teaspoon vanilla extract
- Pinch of salt
- 4 ounces semisweet chocolate, chopped
- 1/2 cup heavy cream
- 1/4 cup chopped peanuts or almonds, for garnish
- Preheat your oven to 350ยฐF (175ยฐC). Lightly grease a 9-inch pie dish.
- In a medium bowl, mix together the chocolate cookie crumbs and melted butter until well combined.
- Press the mixture evenly into the bottom and up the sides of the prepared pie dish to form the crust.
- Bake the crust in the preheated oven for 8-10 minutes, or until set. Remove from the oven and let it cool completely.
- While the crust is cooling, prepare the vanilla custard filling. In a saucepan, heat the whole milk over medium heat until it begins to simmer.
- In a separate bowl, whisk together the granulated sugar, cornstarch, egg yolks, vanilla extract, and salt until smooth and well combined.
- Gradually pour the hot milk into the egg mixture, whisking constantly to prevent curdling.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened and bubbling, about 5-7 minutes.
- Remove the custard from the heat and pour it into the cooled chocolate crust. Smooth the top with a spatula.
- Cover the pie with plastic wrap, making sure the plastic wrap touches the surface of the custard to prevent a skin from forming. Refrigerate for at least 2 hours, or until the custard is chilled and set.
- Once the custard is set, prepare the chocolate ganache topping. Place the chopped semisweet chocolate in a heatproof bowl.
- In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for 1-2 minutes.

- Pour the chocolate ganache over the chilled custard filling, spreading it evenly with a spatula.
