Instructions:
  1. Score the skin of the duck breasts with a sharp knife in a criss-cross pattern, being careful not to cut into the meat.
  2. Season both sides of the duck breasts generously with salt and pepper.
  3. Place the duck breasts skin-side down in a cold, dry skillet or frying pan.
  4. Turn the heat to medium-low and cook the duck breasts for about 8-10 minutes, until the skin is golden brown and crispy. Pour off excess fat periodically during cooking.
