  • 8 ounces fettuccine pasta
  • 2 boneless, skinless chicken breasts, sliced thinly
  • 2 cups broccoli florets

Instructions:

  1. Cook the fettuccine pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced chicken breasts to the skillet and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-6 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and cook for 1-2 minutes until fragrant.
  4. Add the broccoli florets to the skillet and sauté for 3-4 minutes until they are tender-crisp.
  5. Reduce the heat to medium-low. Pour in the heavy cream and grated Parmesan cheese, stirring continuously until the cheese has melted and the sauce has thickened slightly, about 2-3 minutes.
  6. Add the cooked fettuccine pasta and cooked chicken back to the skillet, tossing everything together until well coated in the sauce. Cook for an additional 2-3 minutes until heated through.
  7. Taste and adjust the seasoning with salt and pepper if needed.
  8. Serve the Chicken and Broccoli Alfredo hot, garnished with chopped fresh parsley if desired.
