Ingredients:
- 1 lb chicken breast, cubed
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp ginger, minced
- 2 tbsp madras curry powder
- 1 can (14 oz) diced tomatoes
- 1/2 cup coconut milk
- 1 tbsp vegetable oil
- Salt to taste
- Fresh cilantro (for garnish)
- Sauté Veggies: Heat oil in a large pan. Add the onion, garlic, and ginger, cooking until soft and fragrant.
- Cook Chicken: Add the chicken to the pan, season with salt, and cook until browned on all sides.
- Add Spices and Sauce: Stir in the madras curry powder, then add the diced tomatoes and coconut milk. Simmer for 15-20 minutes until the chicken is cooked through.
- Serve: Garnish with fresh cilantro and serve over rice or with naan.
