Ingredients:

  • 1 lb chicken breast, cubed
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 2 tbsp madras curry powder
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup coconut milk
  • 1 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro (for garnish)
Instructions:

  1. Sauté Veggies: Heat oil in a large pan. Add the onion, garlic, and ginger, cooking until soft and fragrant.
  2. Cook Chicken: Add the chicken to the pan, season with salt, and cook until browned on all sides.
  3. Add Spices and Sauce: Stir in the madras curry powder, then add the diced tomatoes and coconut milk. Simmer for 15-20 minutes until the chicken is cooked through.
  4. Serve: Garnish with fresh cilantro and serve over rice or with naan.
