- 1 refrigerated pie crust (store-bought or homemade)
- 2 tablespoons butter
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup milk or cream
- 2 cups cooked chicken, shredded or diced
- 1 cup frozen peas
- Salt and pepper, to taste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Preheat your oven to 375°F (190°C). Place the refrigerated pie crust in a pie dish and set aside.
- In a large skillet, melt butter over medium heat. Add the chopped onion, diced carrots, diced celery, and minced garlic. Cook until vegetables are tender, about 5-7 minutes.
- Sprinkle flour over the vegetables and stir to coat. Cook for 1-2 minutes, stirring constantly.
- Gradually pour in the chicken broth and milk or cream, stirring constantly to prevent lumps from forming.
