Ingredients:

  • 7g (0.25 oz) matcha powder
  • 40g (1.4 oz) sugar
  • 4g (0.14 oz) gelatine powder
  • 2 tbsp water (for soaking gelatine)
  • 150ml (5.1 fl oz) milk
  • 120g (4.2 oz) thickened cream or heavy cream (35% fat)
Topping:
  • Whipped cream (Chantilly cream)
  • Boiled azuki bean paste
  • Mint leaves for garnish
Directions:
  1. Soak the gelatine powder in 2 tablespoons of water. Once soaked, microwave for 15-20 seconds to melt.
  2. In a jar (at least 350ml/11.8 fl oz capacity), combine sugar and matcha powder. Sift the matcha into the jar and whisk until smooth and lump-free.
  3. Add about Ā¼ of the milk to the jar and mix vigorously until smooth.
  4. Stir in the melted gelatine, then add the remaining milk and cream. Mix well to ensure the matcha is fully incorporated.
  5. Pour the mixture through a sieve into serving glasses or cups.
  6. Chill in the fridge for at least 3 hours.
Serving:
  1. Top each pudding with a heaping tablespoon of whipped cream.
  2. Add a heaping teaspoon of boiled azuki bean paste next to the cream.
  3. Garnish with mint leaves.
Recipe Notes:
  • Use any matcha powder you like. If itā€™s coarse, you might see small green bits in the pudding.
  • Full cream milk is preferred, but light milk works too.
  • Adjust toppings to your taste for sweetness and flavor.
  • Boiled azuki bean paste is available in cans at Asian grocery stores and is less sweet than anko.
  • To avoid matcha clumps, scrape the sides of the jar while mixing.
  • This recipe makes about 300ml (10.1 fl oz) of pudding, enough for 2-3 servings.
  • Store leftovers in the fridge, but add toppings just before serving.
