Ingredients:
- 1 package frozen spinach, thawed and squeezed dry
- 1 cup crumbled feta cheese
- 1/4 cup chopped onion
- 1 egg, lightly beaten
- Salt and pepper to taste
- 1/4 cup olive oil
- 8 sheets phyllo dough
Instructions:
- Preheat your oven to 375°F (190°C).
- Mix spinach, feta, onion, egg, salt, and pepper in a bowl. Easy peasy!
- Brush a baking dish with olive oil. Layer 4 sheets of phyllo, brushing each with oil.
- Spread the spinach mixture evenly over the phyllo.
- Top with remaining 4 phyllo sheets, brushing each with oil.
- Cut into squares before baking (trust me, it's easier this way).
- Bake for about 30 minutes until golden brown and crispy.
