Easy Sauteed Vegetables Recipe

Hey everyone! Just wanted to share my super simple (but delicious) sautéed veggies recipe. I make this all the time when I need a quick and healthy side dish. You can switch up the veggies based on what you have, but this combo is my favorite!

Ingredients:

  • 1 zucchini, sliced
  • 1 bell pepper (any color), sliced
  • 1 carrot, thinly sliced
  • 1 cup broccoli florets
  • ½ onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp soy sauce (or salt to taste)
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional, for a little heat)
  • A squeeze of lemon juice (optional, but SO good)

How to Make It:

  1. Heat olive oil in a large pan over medium heat.
  2. Add the onion and garlic, sauté for about a minute until fragrant.
  3. Toss in the carrots and bell pepper first (they take a little longer to cook), then after 2 minutes, add the zucchini and broccoli.
  4. Stir-fry everything for about 5-7 minutes until tender but still crisp.
  5. Add soy sauce, black pepper, and red pepper flakes. Stir well.
  6. Finish with a squeeze of fresh lemon juice for some brightness! 🍋
