- 1 cup all-purpose flour
- 4 large eggs

- 1 ½ cups pastry cream or whipped cream

- 1 cup chocolate chips
- ½ cup heavy cream
- 2 tbsp unsalted butter
- For the Choux Pastry:
- Procedure:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a saucepan, bring water and butter to a boil. Stir in flour until mixture forms a ball.
- Remove from heat and beat in eggs one at a time, mixing well after each addition.
- Pipe or spoon the dough onto the baking sheet in strips.
- Bake for 15-20 minutes until golden brown. Let cool.
- Fill cooled pastry shells with pastry cream or whipped cream.
- For the glaze, melt chocolate chips, cream, and butter in a double boiler until smooth. Dip the tops of the eclairs into the glaze.
