Hey foodies! I'm excited to share a unique Ecuadorian dish called Ecuadorian Ceviche. Unlike the traditional ceviche found in other Latin American countries, Ecuadorian ceviche is made with shrimp or fish marinated in lime juice, mixed with tomato, onion, cilantro, and sometimes a touch of orange juice for sweetness. It's served with toasted corn kernels (cancha) and plantain chips for a delicious crunch!

- 1 lb shrimp or firm white fish, peeled and deveined
- 1 cup lime juice
- 1 small red onion, thinly sliced
- 2 tomatoes, diced
- 1 bell pepper, diced
- 1/4 cup cilantro, chopped
- 1/4 cup orange juice (optional)
- Salt and pepper to taste
- Cancha (toasted corn kernels) and plantain chips for serving
- Cut the shrimp or fish into bite-sized pieces and place them in a bowl.
- Pour lime juice over the seafood, making sure it's fully covered. Let it marinate in the fridge for at least 30 minutes or until the seafood turns opaque.
- In another bowl, mix together the sliced onion, diced tomatoes, diced bell pepper, and chopped cilantro.
- Drain the lime juice from the seafood and add it to the vegetable mixture.
- If desired, add orange juice to the ceviche for a touch of sweetness.
- Season with salt and pepper to taste and mix everything well.
- Serve the ceviche chilled, accompanied by cancha and plantain chips.
