Eggplant Balls

Ingredients:

  • 1 large eggplant
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 garlic clove, minced
  • 1 tablespoon chopped fresh parsley
  • 1 egg, beaten
  • Salt and pepper to taste
  • Olive oil for frying
Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Prick the eggplant with a fork and place it on a baking sheet. Roast in the preheated oven for about 30-40 minutes, or until the eggplant is soft.
  3. Remove the eggplant from the oven and let it cool slightly. Cut the eggplant in half and scoop out the flesh into a bowl, discarding the skin.
  4. Add the breadcrumbs, Parmesan cheese, garlic, parsley, egg, salt, and pepper to the bowl with the eggplant flesh. Mix until well combined.
  5. Shape the mixture into small balls and place them on a baking sheet lined with parchment paper.
  6. Heat some olive oil in a large skillet over medium heat. Fry the eggplant balls in batches until golden brown and crispy, about 2-3 minutes per side.
  7. Remove the eggplant balls from the skillet and place them on a plate lined with paper towels to drain excess oil.
  8. Serve the eggplant balls hot as an appetizer or side dish. Enjoy!
