- 1 large eggplant
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 garlic clove, minced
- 1 tablespoon chopped fresh parsley
- 1 egg, beaten
- Salt and pepper to taste
- Olive oil for frying
- Preheat the oven to 400°F (200°C).
- Prick the eggplant with a fork and place it on a baking sheet. Roast in the preheated oven for about 30-40 minutes, or until the eggplant is soft.
- Remove the eggplant from the oven and let it cool slightly. Cut the eggplant in half and scoop out the flesh into a bowl, discarding the skin.
- Add the breadcrumbs, Parmesan cheese, garlic, parsley, egg, salt, and pepper to the bowl with the eggplant flesh. Mix until well combined.
- Shape the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Heat some olive oil in a large skillet over medium heat. Fry the eggplant balls in batches until golden brown and crispy, about 2-3 minutes per side.
- Remove the eggplant balls from the skillet and place them on a plate lined with paper towels to drain excess oil.
- Serve the eggplant balls hot as an appetizer or side dish. Enjoy!
