Ingredients:For the dough:

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1 large egg
  • 1/2 cup cold water
For the filling:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup green olives, pitted and chopped
  • 2 hard-boiled eggs, chopped
  • Optional: 1/2 cup raisins
Instructions:

  1. In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
  2. In a small bowl, whisk together the egg and water. Gradually add this mixture to the flour mixture, stirring until a dough forms. Knead the dough on a floured surface until smooth, then wrap it in plastic wrap and refrigerate for at least 30 minutes.
  3. In a skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  4. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  5. Stir in the cumin, paprika, salt, and pepper. Cook for another 2-3 minutes, then remove from heat and let cool slightly.
  6. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  7. On a floured surface, roll out the dough to about 1/8 inch thickness. Use a round cutter or a glass to cut out circles of dough.
  8. Place a spoonful of the beef mixture in the center of each dough circle. Add some chopped olives and hard-boiled egg on top. If using raisins, add them as well.
  9. Fold the dough over the filling to form a half-moon shape, then crimp the edges with a fork to seal.
  10. Place the empanadas on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
  11. Serve hot or at room temperature.
