- 3 cups all-purpose flour
- 1 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1 large egg
- 1/2 cup cold water
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup green olives, pitted and chopped
- 2 hard-boiled eggs, chopped
- Optional: 1/2 cup raisins
- In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the egg and water. Gradually add this mixture to the flour mixture, stirring until a dough forms. Knead the dough on a floured surface until smooth, then wrap it in plastic wrap and refrigerate for at least 30 minutes.
- In a skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
- Stir in the cumin, paprika, salt, and pepper. Cook for another 2-3 minutes, then remove from heat and let cool slightly.
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- On a floured surface, roll out the dough to about 1/8 inch thickness. Use a round cutter or a glass to cut out circles of dough.
- Place a spoonful of the beef mixture in the center of each dough circle. Add some chopped olives and hard-boiled egg on top. If using raisins, add them as well.
- Fold the dough over the filling to form a half-moon shape, then crimp the edges with a fork to seal.
- Place the empanadas on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
- Serve hot or at room temperature.
