Ingredients:

For the Adobo Pulled Pork:

  • 3 pounds pork shoulder or pork butt, trimmed of excess fat
  • 1 cup soy sauce
  • 1 cup vinegar (white or cane)
  • 1/2 cup water
  • 6 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • 1 tablespoon brown sugar
  • 1 tablespoon vegetable oil
For the Slaw:

  • 2 cups shredded cabbage or coleslaw mix
  • 1 carrot, grated
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon honey or sugar
  • Salt and pepper, to taste
For the Sandwiches:

  • Sandwich buns or rolls
  • Sliced cucumber
  • Sliced red onion
  • Sliced jalapeños (optional)
  • Fresh cilantro leaves
  • Sriracha or chili sauce (optional)
Instructions:

  1. In a large Dutch oven or heavy-bottomed pot, combine the soy sauce, vinegar, water, minced garlic, bay leaves, whole black peppercorns, and brown sugar. Add the pork shoulder or pork butt to the pot and turn to coat in the marinade.
  2. Cover the pot and marinate the pork in the refrigerator for at least 1 hour, or up to overnight for maximum flavor.
  3. Preheat your oven to 325°F (160°C).
  4. Heat vegetable oil in a large skillet or frying pan over medium-high heat. Remove the pork from the marinade, reserving the marinade, and sear the pork on all sides until browned, about 3-4 minutes per side.
  5. Transfer the seared pork to a baking dish or roasting pan. Pour the reserved marinade over the pork.
  6. Cover the baking dish or roasting pan with aluminum foil and roast in the preheated oven for 3-4 hours, or until the pork is tender and easily shreds with a fork.
  7. While the pork is roasting, prepare the slaw. In a bowl, combine the shredded cabbage or coleslaw mix, grated carrot, chopped cilantro, lime juice, honey or sugar, salt, and pepper. Toss until well combined. Set aside.
  8. Once the pork is done, remove it from the oven and use two forks to shred it into bite-sized pieces. Toss the shredded pork in the cooking juices until well coated.
  9. To assemble the sandwiches, place a generous portion of the shredded adobo pork on the bottom half of each sandwich bun or roll. Top with sliced cucumber, sliced red onion, sliced jalapeños (if using), and fresh cilantro leaves. Drizzle with Sriracha or chili sauce for extra heat, if desired.
  10. Serve your Filipino-Inspired Adobo Pulled Pork Sandwiches hot, and enjoy the delicious fusion of flavors in every bite!
