  • 6 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • 1 tablespoon brown sugar
  • 1 tablespoon vegetable oil
For the Slaw:

  • 2 cups shredded cabbage or coleslaw mix
  • 1 carrot, grated
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon honey or sugar
  • Salt and pepper, to taste
For the Sandwiches:

  • Sandwich buns or rolls
  • Sliced cucumber
  • Sliced red onion
  • Sliced jalapeños (optional)
  • Fresh cilantro leaves
  • Sriracha or chili sauce (optional)
Instructions:

  1. In a large Dutch oven or heavy-bottomed pot, combine the soy sauce, vinegar, water, minced garlic, bay leaves, whole black peppercorns, and brown sugar. Add the pork shoulder or pork butt to the pot and turn to coat in the marinade.
  2. Cover the pot and marinate the pork in the refrigerator for at least 1 hour, or up to overnight for maximum flavor.
  3. Preheat your oven to 325°F (160°C).
  4. Heat vegetable oil in a large skillet or frying pan over medium-high heat. Remove the pork from the marinade, reserving the marinade, and sear the pork on all sides until browned, about 3-4 minutes per side.
  5. Transfer the seared pork to a baking dish or roasting pan. Pour the reserved marinade over the pork.
  6. Cover the baking dish or roasting pan with aluminum foil and roast in the preheated oven for 3-4 hours, or until the pork is tender and easily shreds with a fork.
  7. While the pork is roasting, prepare the slaw. In a bowl, combine the shredded cabbage or coleslaw mix, grated carrot, chopped cilantro, lime juice, honey or sugar, salt, and pepper. Toss until well combined. Set aside.
