I recently prepared Finnish Lohikeitto, and it was a heartwarming delight! This traditional salmon soup is creamy, comforting, and brimming with fresh flavors—perfect for chilly days or whenever you're in need of some cozy food. With its rich broth and tender salmon, it’s a dish that beautifully showcases the simplicity and goodness of Finnish cuisine. Here’s how you can make your own Lohikeitto at home:
Ingredients:
- For the Soup:
- 1 lb (450g) fresh salmon fillet, skin removed and cut into chunks
- 4 medium potatoes, peeled and diced
- 1 large onion, chopped
- 3-4 carrots, sliced
- 1-2 leeks, sliced (optional)
- 4 cups fish stock or water
- 1 cup heavy cream (or whole milk for a lighter version)
- 2 tablespoons butter
- 1-2 teaspoons fresh dill, chopped (or 1 teaspoon dried dill)
- Salt and black pepper, to taste
- Lemon wedges, for serving
Instructions:
1. Prepare the Vegetables:
- In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until it becomes translucent.
- Add the diced potatoes, sliced carrots, and leeks (if using) to the pot. Stir and cook for about 5 minutes, allowing the vegetables to soften slightly.
2. Add Stock:
- Pour in the fish stock or water, bringing the mixture to a gentle boil. Reduce the heat and let it simmer for about 15 minutes, or until the potatoes and carrots are tender.
3. Add Salmon:
- Carefully add the salmon chunks to the pot and simmer for an additional 5-7 minutes, until the salmon is cooked through and flakes easily with a fork.
4. Stir in Cream and Season:
- Lower the heat and stir in the heavy cream. Add the dill and season with salt and black pepper to taste. Allow the soup to warm through for a few more minutes without boiling.
5. Serve:
- Ladle the Lohikeitto into bowls and serve hot, garnished with extra dill if desired. Don’t forget to squeeze some fresh lemon juice over the soup for a zesty kick!
