Flavorful Baguio Beans Delight Recipe

Hey everyone! I thought I'd kick off this recipe-sharing board with one of my all-time favorites: Baguio Beans Delight. This dish is a real winner in my household, especially when I'm looking for something nutritious and delicious. Here's the recipe:
Ingredients:
  • 500g Baguio beans (also known as green beans), trimmed and cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 carrot, julienned
  • 200g cherry tomatoes, halved
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
Instructions:
  1. Start by blanching the baguio beans in boiling water for about 2-3 minutes, then immediately transfer them to a bowl of ice water to stop the cooking process. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant and translucent.
  3. Toss in the sliced bell peppers and julienned carrot, and cook for another 3-4 minutes until they start to soften.
  4. Add the cherry tomatoes to the skillet and cook for an additional 2 minutes, stirring occasionally.
  5. Now, it's time to add the blanched baguio beans to the skillet. Season everything with paprika, salt, and pepper according to your taste preferences. Stir well to combine all the flavors.
  6. Cook the mixture for another 5-7 minutes, or until the baguio beans are tender but still crisp.
  7. Once everything is cooked to perfection, remove the skillet from heat and sprinkle the chopped fresh parsley on top for that final burst of flavor.
  8. Serve your Baguio Beans Delight hot as a side dish or even as a main course with some rice or crusty bread. Enjoy the delightful blend of colors and flavors!
