Hey everyone! I thought I'd kick off this recipe-sharing board with one of my all-time favorites: Baguio Beans Delight. This dish is a real winner in my household, especially when I'm looking for something nutritious and delicious. Here's the recipe:

- 500g Baguio beans (also known as green beans), trimmed and cut into bite-sized pieces
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 onion, chopped
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 carrot, julienned
- 200g cherry tomatoes, halved
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
- Start by blanching the baguio beans in boiling water for about 2-3 minutes, then immediately transfer them to a bowl of ice water to stop the cooking process. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant and translucent.
- Toss in the sliced bell peppers and julienned carrot, and cook for another 3-4 minutes until they start to soften.
- Add the cherry tomatoes to the skillet and cook for an additional 2 minutes, stirring occasionally.
- Now, it's time to add the blanched baguio beans to the skillet. Season everything with paprika, salt, and pepper according to your taste preferences. Stir well to combine all the flavors.
- Cook the mixture for another 5-7 minutes, or until the baguio beans are tender but still crisp.
- Once everything is cooked to perfection, remove the skillet from heat and sprinkle the chopped fresh parsley on top for that final burst of flavor.
- Serve your Baguio Beans Delight hot as a side dish or even as a main course with some rice or crusty bread. Enjoy the delightful blend of colors and flavors!
