Ingredients:
  • 4 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon granulated sugar
  • 1/2 cup dry white wine (optional)
  • 6 cups beef broth
  • 2 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 1 bay leaf
  • Salt and black pepper to taste
  • Baguette slices
  • Gruyere cheese, grated
Instructions:
  1. In a large pot or Dutch oven, melt the butter with the olive oil over medium heat.
  2. Add the sliced onions to the pot and cook, stirring occasionally, until they are caramelized and golden brown, about 30-40 minutes.
  3. Stir in the minced garlic and sugar and cook for an additional 1-2 minutes.
  4. If using, pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom.
  5. Add the beef broth, thyme sprigs (or dried thyme), and bay leaf to the pot. Season with salt and pepper to taste.
  6. Bring the soup to a simmer and let it cook for about 20-30 minutes to allow the flavors to meld together.
  7. While the soup is simmering, preheat your oven's broiler.
  8. Ladle the soup into oven-safe bowls. Top each bowl with a slice of baguette and a generous amount of grated Gruyere cheese.
  9. Place the bowls on a baking sheet and broil until the cheese is melted and bubbly, about 2-3 minutes.
  10. Carefully remove the bowls from the oven (they will be hot!) and serve immediately.
