- 4 large yellow onions, thinly sliced
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon granulated sugar
- 1/2 cup dry white wine (optional)
- 6 cups beef broth
- 2 sprigs fresh thyme (or 1 teaspoon dried thyme)
- 1 bay leaf
- Salt and black pepper to taste
- Baguette slices
- Gruyere cheese, grated
- In a large pot or Dutch oven, melt the butter with the olive oil over medium heat.
- Add the sliced onions to the pot and cook, stirring occasionally, until they are caramelized and golden brown, about 30-40 minutes.
- Stir in the minced garlic and sugar and cook for an additional 1-2 minutes.
- If using, pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom.
- Add the beef broth, thyme sprigs (or dried thyme), and bay leaf to the pot. Season with salt and pepper to taste.
- Bring the soup to a simmer and let it cook for about 20-30 minutes to allow the flavors to meld together.
- While the soup is simmering, preheat your oven's broiler.
- Ladle the soup into oven-safe bowls. Top each bowl with a slice of baguette and a generous amount of grated Gruyere cheese.
- Place the bowls on a baking sheet and broil until the cheese is melted and bubbly, about 2-3 minutes.
- Carefully remove the bowls from the oven (they will be hot!) and serve immediately.
