- 4 large russet potatoes, scrubbed and diced
- 6 slices bacon, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup whole milk or heavy cream
- 1 cup shredded cheddar cheese, plus extra for topping
- 1/2 cup sour cream
- 2 tablespoons unsalted butter
- Salt and pepper, to taste
- Chopped green onions or chives, for garnish
- Sour cream, for garnish
- Crumbled bacon, for garnish
- In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.
- Add the diced onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
- Add the diced potatoes and chicken or vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer until the potatoes are tender, about 15-20 minutes.
- Using a potato masher or immersion blender, partially mash the potatoes in the pot to thicken the soup to your desired consistency. Leave some chunks for texture.
- Stir in the whole milk or heavy cream, shredded cheddar cheese, sour cream, and unsalted butter until the cheese is melted and the soup is creamy. Season with salt and pepper to taste.
- Ladle the soup into bowls and top with additional shredded cheddar cheese, chopped green onions or chives, sour cream, and crumbled bacon.
