🍛 **Ingredients**:
- 500g fish fillets (or chicken)
- 2 cups coconut milk
- 2 tbsp yellow curry paste
- 1 cup water
- 2 cups mixed vegetables (carrot, green beans, and potatoes)
- 1 tbsp fish sauce
- 1 tbsp sugar
- 2 kaffir lime leaves, torn
- Fresh basil for garnish

🍜 **Instructions**:
1. Heat 1 cup of coconut milk in a pot over medium heat until it simmers.
2. Add the yellow curry paste and stir until fragrant.
3. Pour in the remaining coconut milk and water, then bring to a boil.
4. Add the fish fillets (or chicken) and mixed vegetables, cooking until tender.
5. Stir in the fish sauce, sugar, and kaffir lime leaves.
6. Simmer for a few more minutes, then garnish with fresh basil.
7. Serve hot with steamed rice and enjoy the rich, spicy flavors!
