  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves black garlic, mashed
  • 1/2 cup white wine
  • 4 cups vegetable broth, warmed
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp butter
  • Fresh parsley, chopped (for garnish)
  • Edible gold flakes (optional, for that cosmic touch)
Procedure:

  1. Heat the olive oil in a large pan over medium heat. Add the onion and sauté until translucent.
  2. Stir in the Arborio rice, toasting for a minute or two. Add the mashed black garlic and mix well.
  3. Pour in the white wine and cook, stirring, until the liquid is mostly absorbed.
  4. Begin adding the warm broth, one ladle at a time, stirring constantly and waiting for each addition to be absorbed before adding the next.
