- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1/2 cup white wine
- 2 cups seafood or chicken broth
- 2 eggs
- Juice of 2 lemons
- 1/2 cup fresh parsley, chopped (for garnish)
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté the onion and garlic until softened, about 5 minutes.
- Add the white wine and simmer for 2 minutes, then pour in the broth and bring to a simmer. Let cook for 10 minutes.
- In a bowl, whisk together the eggs and lemon juice. Gradually add hot broth to the egg-lemon mixture, stirring constantly to temper the eggs.
