Garides Fournou Me Avgolemono is a Greek baked shrimp dish where shrimp are smothered in a velvety egg-lemon (avgolemono) sauce, creating a tangy and creamy flavor explosion.


Ingredients:
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1/2 cup white wine
  • 2 cups seafood or chicken broth
  • 2 eggs
  • Juice of 2 lemons
  • 1/2 cup fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions:
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until softened, about 5 minutes.
  3. Add the white wine and simmer for 2 minutes, then pour in the broth and bring to a simmer. Let cook for 10 minutes.
  4. In a bowl, whisk together the eggs and lemon juice. Gradually add hot broth to the egg-lemon mixture, stirring constantly to temper the eggs.
  5. Pour the tempered egg-lemon sauce back into the skillet, stirring gently until the sauce thickens.
  6. Arrange the shrimp in a baking dish and pour the avgolemono sauce over them. Bake for 15-20 minutes, or until the shrimp are fully cooked.
  7. Garnish with fresh parsley and serve warm with bread or rice.
