Garides Fournou Me Manitaria is a Greek baked shrimp dish featuring shrimp cooked with earthy mushrooms in a savory sauce, perfect for a rich and comforting meal.



Ingredients:
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups mushrooms, sliced (button or cremini)
  • 1/2 cup white wine
  • 1/2 cup chicken or seafood broth
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until softened.
  3. Add the mushrooms and cook until they release their juices and become tender, about 5 minutes.
  4. Pour in the white wine and broth, and let the mixture simmer for 5-7 minutes until slightly reduced.
  5. Arrange the shrimp in a baking dish and pour the mushroom mixture over them. Season with oregano, salt, and pepper.
  6. Sprinkle crumbled feta cheese on top (if using) and bake for 15-20 minutes, until the shrimp are cooked through.
  7. Garnish with fresh parsley and serve with crusty bread or over pasta.
